Melanzane Ripiene

3 medium sized eggplants flattened with a rolling pin and cut lengthwise. Drizzle with olive oil. Roast at 400 degrees for about 40 minutes or until very soft

Filling:
1 onion chopped
1 clove garlic chopped
1 bell pepper chopped
1 14oz can diced tomatoes
1 cup Chopped cooked chicken
salt, pepper, Italian seasoning

Cook this mixture about 15 min.

Sauce:
1 jar passata
2 TBSP oil
2 loves garlic
oregano, salt, pepper

Stuff the eggplant and top with parmesan cheese. Bake an additional 20 minutes
